Poor Man's Caviar

"POOR MAN'S CAVIAR"

Marinade:
1 cup vegetable oil
1/2 cup apple cider vinegar
2 cup sugar
3/4tsp salt
3/4tsp pepper
dash lemon juice

Combine marinade in saucepan, put on medium heat and increase heat slowly to bring to a boil. Remove from heat and allow to cool while preparing veggies.

Veggies:1 can of the following, drain and rise well:
black beans, white shoepeg corn, black-eyed peas1 cup each of finely chopped green pepper and celery1/2 cup finely chopped onion1 small jalapeno finely chopped.When marinade is cool, combine all ingredients and refrigerate overnight Drain some and serve with chips, etc.
