Easy Penne

1 qt. tomatoes with juice
6 cloves garlic, minced
1 TBLS. olive oil
2 cups water
12 oz. ziti (I use penne)
1/2 t. salt
1/2 t. sugar
1/4 t. red pepper flakes
1/4 c. fresh basil (or 1/2 t. dried)
1/2 c. Parmesan
1/2 c. cream----whipping cream
1 c. mozzarella

Heat oil in large skillet. Add garlic and cook 1 minute. Add tomatoes and juice, water, salt, sugar, pepper & pasta. Stir well, reduce heat to med/hi. Simmer covered, stirring occasionally, for 12-15 minutes. Then stir in basil, Parmesan & cream. Top with mozzarella and place in 475 degree oven for 10 minutes or until cheese is bubbly & browned. (you may need to wrap your skillet handle in tin foil if its not oven-safe)
